Foreword by Sue Conley and Peggy Smith

Best friends Sue Conley and Peggy Smith are the co-founders of Cowgirl Creamery. Arriving in San Francisco in 1976, just as Alice Waters’ food revolution was taking hold, both women forged separate culinary careers in the Bay Area before becoming cheese entrepreneurs. During the seventeen years Peggy spent at Waters’ Chez Panisse’s upstairs Café, she learned the nuances of fromage from acclaimed French chefs and master affineurs. During this same time, Sue was making her mark at Bette’s Oceanview Diner in Berkeley. Inspired by meeting the family behind Straus Family Creamery in Marin County, in 1994 Sue invited Peggy to move to Point Reyes and join her in crafting artisan cheeses using organic milk. They have been making friends and cheese ever since.
